The origin of Honey

Lets' talk about honey.
There is a great number of different honeys out there. Some are more useful and suitable for medicinal purposes than others. There are many ancient texts that describe in detail the potency of different types of honey, its uses and efficacy. The same texts point to how different types honey were used to treat a variety of human illnesses long ago and in many parts of the world, to today.
A good honey has a delicate aromatic smell. The very aroma of honey is one of the characteristics that points to the honey’s origin, geographic as well as a flower source. There are over a 120 elements and substances inside honey, that form a unique signature for every honey’s variety. The more known ones are esters, aldehydes, ketones, alcohols, carboxyl compounds. The honey produced by bees from a sugary grape liquid has no nectar impurities, and subsequently no smell. The aromatic substances are volatile, so the smell of honey weakens over time. The color and smell of honey depend entirely on the respective qualities of the flower nectar and a region from which it is collected by bees.
The lighter color varieties of honey (orange, sage, cactus, etc.) are considered most valuable. There is one exception, buckwheat honey. At the same time, darker color varieties are richer in mineral substances that are indispensable for human the body.
